The region sits at 1,700–2,000 metres above sea level and benefits from high elevations, rich soils and favourable rainfall, with most farms averaging less than a hectare. Karambi works with more than 750 smallholder producers, over two-thirds of whom are women. For this natural lot, only ripe cherries are selected at intake, with flotation and careful hand sorting used to remove underripe or defective fruit. The cherries are then spread in thin layers on raised drying beds and regularly turned throughout the drying period, allowing the fruit to dry slowly and evenly for around three weeks. This extended natural process brings out the expressive character of Rwandan Red Bourbon, with vibrant fruit, gentle spice and a smooth, balanced sweetness.

Finca Juan Martin’s Oxidation Washed Sidra comes from Banexport’s experimental farm in Sotará, Cauca, Colombia, sitting at an impressive 2,050 metres above sea level. Established in 2018, the farm is dedicated to exploring different varieties and processing techniques, with a strong focus on quality, sustainability and careful agricultural practices. For this Sidra, ripe cherries are disinfected, sorted and pulped before the beans enter a controlled bioreactor, where oxygen flow and other variables are carefully regulated. Rather than traditional fermentation, naturally occurring yeasts metabolise sugars through respiration, helping to develop aromatic precursors while keeping organic acid production in check. The coffee is then washed three times and dried for 10 days. The result is an exceptionally clean and vibrant cup, with bright kumquat and pink grapefruit, juicy Strawberry, soft vanilla sweetness with red florals and a lively, sparkling acidity.

Irene S. Sosa’s Pacamara comes from Finca Talquesalar in El Salvador, situated at 1,400 metres above sea level. The farm produces distinctive coffees from some of El Salvador’s most prized varieties, with the elevation providing a favourable environment for slow cherry development and concentrated sweetness. Pacamara is a uniquely Salvadoran variety, created by crossing Pacas and Maragogipe, and is renowned for its large beans, aromatic complexity and layered sweetness. For this lot, ripe cherries are carefully selected before being pulped and dried with a portion of the fruit mucilage left intact - a process known as honey processing. As the coffee slowly dries, the remaining mucilage contributes additional sweetness and depth while preserving the variety’s clarity and expressive character. The result is a beautifully structured Pacamara with vibrant fruit, floral aromatics, rounded sweetness and a silky, lingering finish.

Kenya AA Kiamugumo comes from the Kiamugumo Station in Kirinyaga County, situated at 1,600 metres above sea level on the fertile slopes of Mount Kenya. Smallholder farmers in the surrounding area cultivate coffee in rich volcanic soils, with the high elevation and cool temperatures encouraging slow cherry maturation and concentrated sweetness. This lot is a blend of classic Kenyan varieties, including SL28, Ruiru 11 and Batian. Carefully selected ripe cherries are delivered to the factory, where they are pulped and fermented before being thoroughly washed to remove the remaining mucilage. The parchment is then graded by density and dried slowly on raised African drying beds.
