COLOMBIA JUAN MARTIN 200g

Finca Juan Martin’s Oxidation Washed Sidra comes from Banexport’s experimental farm in Sotará, Cauca, Colombia, sitting at an impressive 2,050 metres above sea level. Established in 2018, the farm is dedicated to exploring different varieties and processing techniques, with a strong focus on quality, sustainability and careful agricultural practices. For this Sidra, ripe cherries are disinfected, sorted and pulped before the beans enter a controlled bioreactor, where oxygen flow and other variables are carefully regulated. Rather than traditional fermentation, naturally occurring yeasts metabolise sugars through respiration, helping to develop aromatic precursors while keeping organic acid production in check. The coffee is then washed three times and dried for 10 days. The result is an exceptionally clean and vibrant cup, with bright kumquat and pink grapefruit, juicy Strawberry, soft vanilla sweetness with red florals and a lively, sparkling acidity.
